Buttery Sriracha Pot Roast

This is what I am cooking for dinner today, so I wanted to share the recipe again. The pan juices from this roast, combined with butter, Sriracha and caramelized onions, are so delicious that I spoon them onto my meat. I don't use too much Ranch seasoning to avoid overpowering the other flavors. This roast is amazing! This pot roast is a must-try if you love pot roasts. You'll probably add it to your rotation of roast recipes. It is THAT good! This is a very simple recipe. There was a slight tingle in my mouth, but it wasn't very spicy. It was not too spicy for me. I'm not a big fan of spicy food.
Buttery Sriracha Pot Roast
The recipe can be used for any phase of the Atkins or Keto diets.

INGREDIENTS:

2 1/4 lb. Beef chuck roast

1/2 pkg. Ranch Buttermilk Dressing Powder

3 oz. Onion, thinly sliced

2 tsp. Sriracha sauce

Cut into small pieces 4 T. of unsalted butter

PREHEAT the oven to 350o. Place meat in suitable pan. I used a metal 9x9 square pan. Sprinkle the ranch powder on top of the meat. Then top with the onions. Invert the Sriracha bottle, and zigzag 2 teaspoons of sauce in a motion similar to how they drizzle chocolate sauce on desserts at fancy restaurants. Sriracha sauce on top of the onion layer. Dot small pieces of butter evenly over the onion layer. Add a generous amount of black pepper. Bake for 2 hours without covering the oven. Chuck takes a little longer to become tender. You'll end up with only 2 pounds of meat. The cooked meat will easily serve four people, or even five. I am calculating for four adult portions. Serve meat in thick slices with the pan juices. Pan juices do not need to be thickened.
